મનુષ્ય પાચનતંત્રની આકૃતિ : મનુષ્યમાં પાચનક્રિયા : મનુષ્યના મુખમાં ખોરાક મુકાય કે તરત જ પાચનની શરૂઆત થાય છે.મુખમાં ખોરાકનું પાચન : જ્યારે મુખમાં દાંત દ્વારા ખોરાક ચાવવાની ક્રિયા શરૂ થાય છે, ત્યારે લાળગ્રંથિમાંથી લાળરસનો સ્ત્રાવ થાય છે. જીભ ખોરાકને લાળરસ સાથે ભેળવે છે.લાળરસ પાણી જેવું પ્રવાહી છે. તે મુખમાં ખોરાકને ભીનો કરે છે. લાળરસમાં રહેલો એમાયલોઝ ઉત્સેચક ખોરાકમાં રહેલા સ્ટાર્ચનું શર્કરામાં પાચન કરે છે.સ્ટાર્ચ/ગ્લાયકોજન    શર્કરા (ડાયસેકેરાઈડ)મુખમાં ખોરાક થોડો સમય રહેતો હોવાથી અંશતઃ પાચન થાય છે. આ ખોરાક મુખમાંથી કંઠનળી અને અન્નનળીમાં પસાર થઈ જઠરમાં જાય છે.જઠરમાં ખોરાકનું પાચન : જઠરમાં ખોરાક વ
